It's now been officially recommended to wear a cloth mask (at least) when going out in public.
My sister (who is medically fragile) had a small stash of N95 masks.
Considering I also have asthma and both my kids are predisposed to developing the condition (I'm shocked they haven't been diagnosed yet)...my mom wanted me to wear one when going out in public.
Listen.
I have NO INTENTIONS on leaving my house.
HOWEVER.
I have to go grocery shopping.
Yes, I can send Steve.
And I have.
But he doesn't exactly get what I want or need.
Not exactly.
And having been confined to the house for 8 days, then another 9? I had to get out.
And it was Easter on Sunday and I wanted to make sure the girls got fun stuff.
So I went out.
During this haul, I had a couple of specific things in mind.
I saw an ad for biscuits and gravy.
I just needed to have it.
I got what I needed.
Or so I thought.
Forgot a key ingredient.
The fucking biscuits, you guys.
There's no way I'm going back in there. About 2/3 of the people were wearing masks. It was shocking/scary in a really weird way.
Anyway.
I got home and figured I may as well learn how to make homemade biscuits.
From scratch.
And well, folks.
I fucking did it and they were fucking amazing.
And with the homemade sausage gravy?
Are you fucking kidding me?
The biscuits were shockingly easy to make and SO FUCKING GOOD.
Also super easy to make
Recipe:
Biscuits:
2 cups flour1 tbsp baking powder
1 tbsp sugar
1 tsp salt
3/4 cup of whole milk (COLD)
6 tbsp unsalted butter, (COLD - I put my butter in the freezer)
Mix dry ingredients together
Add super cold butter. I used a box grater to get the right sized pieces and it's perfect. Super cold though! This is the MOST important part! You don't want the butter to melt as you get the dough put together.
Your dough should be crumbly at this point. With the cold butter.
Mix in the milk. Get it so it's JUST combined. DO NOT over mix!
Get it manageable with flour and get it out on the counter.
Use your hands to press it into a rectangle shape, fold it in half and do it again 5-6 times. You want all these flaky layers.
Then, using your HANDS (not a rolling pin), get it to be about an inch thick.
Cut out the biscuits (I actually don't have the right cutter, so I struggled here a bit).
Bake in a 425 degree oven for about 12 minutes.
We will likely be in quarantine for the next several weeks.
I want to make the best of it.
If that means I learn how to be a better cook, I'm all for it!
